Ajvar - Capsicum Dip/Sauce

(I have come across many websites with almost the same ingredients and way of making this wonderful dip/sauce. With this in mind, there must obviously be only one way of making this so that it actually tastes like it should!)

Ingredients :

  • 5 Large Red sweet Peppers

  • 2 Large Eggplants (better over ripe then under)

  • 2 Tablespoons of Basil Leaves

  • 2 Tablespoons of finely chopped Parsley

  • 1 Garlic Clove finely chopped

  • Half a cup of olive oil

  • 3 Tablespoons of lemon juice

  • Salt 

  • Pepper

Instructions :

Bake the eggplants and sweet peppers at a moderate oven temperature until everything is tender throughout. Remove the skin (while hot) and finely chop the vegetables. I have had some success with using the course holes in a cheese grater, however this can be rather messy.
At this point stir in the garlic and lemon juice, and then add salt and pepper until a desired taste is achieved.


This is the trickiest part : Slowly add as much oil as possible, but only as much as the mix will absorb while stirring well.


Once you are satisfied with the mix, place contents into a jar and sprinkle with finely chopped parsley and basil.
