Pastirska Juha - Shepherds Soup

Ingredients :

  • half a kg lean lamb (diced)

  • half a kg veal chops (cut in half)

  • half a kg lean pork neck (cut into chunks)

  • 4 medium onions (finely chopped)

  • 3 cloves of garlic (finely chopped)

  • 2 hot chillies (seeded and finely chopped)

  • half a cup of oil

  • 1 teaspoon of Vegeta

  • 1 teaspoon of salt

  • 2 bay leaves

  • 1 teaspoon of mild paprika

  • 5 peeled tomatoes (chooped)

  • 1 table spoon of tomato paste

  • 5 potatoes (peeled and coarsely chopped)

  • 1 glass of dry white wine

Instructions :

In a large saucepan, heat the oil and fry the onions and garlic until golden brown in color. Add the lamb, veal, pork and chillies and saute for 30 minutes.

Add 3 cups of water, tomatoes, paprika, Vegeta and Bay leaves and cook for a further 25 minutes.

Add wine and potatoes and stir. Add 2-3 cups of water and cook for 25 more minutes. Remove from heat, stir well and serve with boiled rice or egg fettucine.
