Punjene Paprike - Stuffed Capsicums

Ingredients :

  • 10 medium green capsicums

  • 150g. minced pork

  • 150g. minced beef

  • 1 cup of long grain rice

  • 2 medium onions (chopped)

  • 4 cloves of garlic (chopped)

  • 1 teaspoon tomato paste

  • 1 teaspoon of Vegeta

  • 1 tespoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • 1 teaspoon chopped parsley

  •  2-3 tablespoons of cooking oil

  • 3 cups of tomato puree

  • 1 egg

Instructions :

Cut off the top of the capsicums and remove seeds and rinse in cold water. Set aside open end facing down.
Heat oil in a saucepan and fry garlic and onions until soft. Remove from heat and allow to cool off.
Add pork, beef, rice, onion, garlic, vegeta, salt, black pepper, paprika, chopped parsley, egg and tomato paste to a bowl and mix well with clean hands.
Fill the capsicums with this mixture. Arrange the capsicums in a large saucepan open end facing upwards. Pour the tomato puree over them and bring to boil. Reduce the heat to low and cover and cook for 1 hour, occasionally shaking the saucepan (do not stir).

Serve with mashed potatoes
