Punjeni Kupus - Stuffed Cabbage Rolls

Ingredients :

  • I medium head of pickled cabbage

  • 250g. minced pork

  • 250g. minced beef

  • 100g. chopped smoked bacon

  • Half a kilo smoked bacon bones (or ribs)

  • 1 cup rice

  • 1 medium onion, chopped

  • 5 cloves of garlic, chopped

  • 1 egg

  • 1 tsp salt

  • 2 bay leaves

  • 1 tsp Vegeta

  • 1 tsp chopped parsley

  • 1 tsp mild paprika

  • 1 tsp ground pepper

  • 1 tbsp tomato paste

Instructions :

Remove 12 - 15 leaves from the cabbage.  Trim the rib in the middle of the leaves with a sharp knife.  Thinly slice the rest of the cabbage.
Heat the oil in a frying pan, add chopped onion and chopped garlic and fry them until soft, then let cool off.
Add pork, beef, smoked bacon, rice onion and garlic, Vegeta, parsley, parprika, pepper, salt and an egg to the bowl - mix well with clean hands.
Place some stuffing on top of each leaf and roll them up.  Tuck in the ends and set the rolls aside.
In a large saucepan, lay half of the sliced cabbage on the bottom and arrange the rolls on top.  Add the rest of the sliced cabbage and place the bacon bones and bay leaves on top.  Dissolve tomato paste in enough water to cover the cabbage and bring to boil.
Reduce heat to low and cook for one and a half to two hours.  Occasionally give the saucepan a shake (do not stir).  Turn the heat off and allow to sit for 15 - 20 minutes.  Discard the bones and serve with boiled potatoes.
