Savijaca od Oraha - Walnut Roll

Yeast Ingredients :

  • 15g. of compressed yeast

  • 2 tablespoons of plain flour

  • 1 tablespoon of sugar

  • half a cup of milk

Dough Ingredients :

  • 4 cups of plain flour

  • half a teaspoon of salt

  • 1 tablespoon of grated lemon rind

  • 1 cup of milk

  • two thirds of a cup of milk

  • 2 egg yolks

  • 100g. of butter

Filling Ingredients :

  • 500g. of ground walnuts

  • half a cup of sugar

  • 1 cup of milk

  • 100g. of sultana's

  • 1 tablespoon of rum

  • 1 teaspoon of cinnamon

  • 1 tablespoon of grated lemon rind

  • 2 egg whites

Glaze inredients :

  • 1 egg yolk

  • 1 tablspoon of milk

Yeast Instructions :

Crumble yeast into combined flour and sugar. Warm milk to luke warm and add to yeast mixture. Mix well, cover and stand in warm place for 20 - 25 minutes.

Filling Instructions :

Combine sugar, milk, sultana's, rum, cinnamon and grated lemon rind in saucepan. Stir over heat until sugar has dissolved and the ingredients well combined. Pour over the ground walnuts and stir over low heat until the mixture resembles a thick porridge. Remove from heat and allow to cool. Beat egg whites into a stiff foam and fold into cool mixture.

Dough Instructions :

Sift flour and salt into bowl, add lemon rind and mix well. Heat milk, sugar and butter together and stir until sugar has dissolved and butter melted. Allow to cool for a little while. Add this to the flour with the egg yolk and mix to a dough. Add yeast mixture and beat well with a wooden spoon for 8-10 minutes. Cover and let stand for one hour. Beat again for 5 minutes then put on to a heavily floured surface. Dust hands with flour and knead until dough is smooth and elastic. Roll out into a rectangle measuring approx. 30cmX60cmX2cm thick. Trim edges, cut dough in half so that you are left with two 30cm squares. Spread half of the filling on each, and roll up as for a swiss roll with the flap on the bottom.
Place the rolls into a greased baking dish and glaze with combined egg yolk and milk. Cover, and stand in a warm place for 20 minutes. Then bake in oven at a low temperature for 10 minutes, and then increase heat to a moderate temperature baking for a further hour. Allow to cool before slicing.
